Robert Princic and Matjaz Cetrtic continue their research into new ideas and new projects. Considering the excellent quality of their Chardonnay grapes from Collio and Brda they decided to complete their Sinefinis line with this exquisite Blanc de Blancs.

Appearance: A Chardonnay-based blanc de blancs with a rich straw shade and medium-intensity perlage.
Nose: This is a wine which opens on the nose with light buttery tones followed by apricot and a seductive hint of tropical fruit.
Palate: On the palate, in contrast to the nose, classic Chardonnay notes of hazelnut and crisp green apple emerge. Volume and a round creamy texture are the mouth-feel sensations, underpinned by a savoury mineral character which gives length and definition to the finish. More of a food wine than an aperitif, this is a true classic with Collio and Brda written all over it.

TYPE OF PRODUCTION

Vineyards: San Floriano del Collio, Gradisciutta, Bilijana, Kojsko
Altitude: 100-300 m
Soil: Ponca (marl and sandstone flysch)
Canopy training: Single guyot, 4000-5000 vines/ha, yield 7000 kg/ha
Vinification: Hand harvested at precisely the right time, preserving the freshness and perfect sugar levels. Gentle pressing of whole bunches, followed by immediate racking and fermentation at a controlled temperature. Before refermentation, the wine is matured on the lees for at least 6 months. The second fermentation takes place in the bottle and the wine matures on its own yeast culture for a minimum of 60 months.
