The second reinterpretation of the original Sinefinis idea is to expresses Pinot Noir’s finest features.

Appearance: This rosé exhibits a very attractive pale coral shade with a lively perlage.
Nose: On the nose the wine introduces itself with fresh red cherry aromas and side notes of thyme and lavender.
Palate: The palate has a firm structure backed by a balanced depth and concentration which testify to the quality of the base wine from this warm, ripe vintage. The fruit returns delicately on the palate together with a note of almond kernels, progressing towards a savoury mineral finish. Sinefinis Rosé is a great aperitif, but its true vocation is accompanying food, served cool but not over-chilled, in order to appreciate all its nuances.

Vineyards: San Floriano del Collio, Gradisciutta, Bilijana, Kojsko
Altitude: 100-300 m
Soil: Ponca (marl and sandstone flysch)
Canopy training: Single guyot, 4000-5000 vines/ha, yield 7000 kg/ha
Vinification: Hand harvested at precisely the right time, preserving the freshness and perfect sugar levels. Gentle pressing of destemed bunches, followed by immediate racking and fermentation at a controlled temperature. Before refermentation, the wine is matured on the lees for at least 6 months. The second fermentation takes place in the bottle. The wine matures on its own yeast culture for a minimum of 36 months.
